So far we are 3-4 Rl friends that look into makeing chars for a caster/kite group.

Can someone verify the prefered setup?
Sorcerer (mind spec)
Minstrel
Cleric
Cleric
Cabalist (spirit spec)
Cabalist (atleast some near sight)
Thurgist (here i know nothing)
Paladin (not sure if any Shield tank would do, but i would love the endurance for speed 6)

So far we are:
Sorcerer, Cabalist, Cleric and Cabalist/Minstrel
For small man, should 4th be a dps or Minstrel, So far im little afraid to not be able to pick my own fights if we run on Sorcerer speed.

If you don't have a mincer for small man you will likely get chased down and killed by some full groups.

Your full group setup seems fine if min/maxing I'd say drop the paladin for an arms but to each their own.

if its just 4 of you then go minst. if you are planning to round out the group with 8 people and always run as fg then you want another cab

So for alb caster 8man you really only have a couple choices. Every class with a * is a must. Which leaves us with 2 slots. Best alb groups i've seen run 2 sorcs with the two different specs, also to get more out of the cabalist body debuff. For the last spot i've seen people run an armsman for peels. Det > paladin every time. Any competitive 8man will just run invig pots.

Minstrel*
Cleric*
Cleric*
Sorc*
Cabalist*
Theurg*
Sorc
Armsman

The best trio in alb is cleric, minstrel, sorc. A good forth is cabalist for nearsight and debuff for the sorc. Also a 3rd pet in the group which is amazing at this patch level. If you want to small man with your friends and be viable in every 8man group then make those 4 classes.

I'd say remove the theurg for 41 matter / 35 body cab.
5 pets is enough for rupts and NS is OP

About Cabalist specs in that setup.

One will be 46Spirit and 28 Body

should the second also be same or should it be something like 41 Matter and 35 body and 3 spirit.

this way we get the best from both worlds (red debuff and red NS) and keep one "farmer"

While leveling up to lvl 40 both will be Matter specced to be sure we got one online. In pve do AOE dot stack from both Cabalists?

I would totally go for the matter body spec with the second cab, you will also have aoe disease which is absolutely invaluable in a kite group.

As far as leveling goes, the dots from 2 cabs dont stack, so 2 matter cabs in a group is basically useless. You can level in teams of 3 maybe (cab+cler+sorc) + (cab+cler+mins), that would probably work very well.

One focus pull and other aoe dot the pull or can one cabalist do this on his own? that way we utilise our whole grp. and second cabalist and sorcerer can take down mobs that add or break from focus pull

One cab could do that (and usually does), 2 can do it better, thats true, and its more mana efficient, so itll work out.

Ardri's is the most correct answer, IMO. Likewise, I would advise only running one Cab, but put your best player on it, and make it Tri-spec (probably 25M 34B 33S). That way you get blue Nearsight, yellow Body debuff, and decent damage. Though keep in mind, that spec won't shine its brightest until higher RR due to damage variance from low Body. The rest of his list is perfect.

I think the idea of using a Cab's AoE DOTs in a kite group is dangerous. You need to be able to throw down roots and mezzes at critical times, and those DOTs will break it/provide immunities. Having a Mind Sorc and a Body Sorc will give you a better mix of damage and CC, than two Cabs will.

Also, never drop the Theurgist, it is Albion's saving grace. Really, it's your biggest advantage. Virtually every group is better off with a Theurg (Whether you should spec high Earth, or high Air, is mostly dependent on if you what kind of groups you're fighting). You already have lots of tools to use against melee groups, so take advantage of massive pet numbers for those caster/hybrid groups!

As for small man, definitely go for the Minstrel :)
