Confidering switching to a Minstrel instead of a Sorc, same mana buffs (although at different levels) and higher speed will be vital for good RvR.

Nope Sorc mezz / utility will be vital for RvR =)
No grp runs without sorc, but some run without minstrel.
But for xp it doesn't matter

Pala + Sorc = Mincer Speed

But you're forgetting that Minstrel speed + Paladin = 265.2

Take sorc not mincer for BG action, u ll suffer a lot w/o sorc. no need for speed 6 in bgs anyway
